Fluffy Upma
Ingredients:
1 cup Fortune Suji / Rawa, 2 cups Water, 1 Onion (finely chopped), 2 Green Chillies, 1 tsp Mustard Seeds, Curry Leaves, 2 tbsp Oil, Salt to taste, Fresh Coriander to garnish
Method:
- Heat oil; add mustard seeds and let them splutter.
- Add onion, green chillies, curry leaves. Saute until golden.
- Add water and salt. Bring to a boil.
- Gradually add Fortune Suji / Rawa, stirring continuously.
- Cook on low flame for 3 to 4 minutes until light and fluffy.
- Garnish with fresh coriander. Serve hot.
Golden Halwa
Ingredients:
1 cup Fortune Suji / Rawa, 3/4 cup Sugar, 2 1/2 cups Water, 4 tbsp Ghee, 1/2 tsp Cardamom Powder, Cashews and Raisins to garnish
Method:
- Heat ghee in a heavy-bottomed pan; add Fortune Suji / Rawa and stir for 2 minutes.
- Gradually add warm water, stirring continuously.
- Add sugar and cardamom. Mix well.
- Cook until the halwa thickens and ghee begins to separate.
- Garnish with fried cashews and raisins. Serve warm.
Festive Sheera
Ingredients:
1 cup Fortune Suji / Rawa, 3/4 cup Sugar, 2 1/2 cups Milk, 3 tbsp Ghee, 1/4 tsp Cardamom Powder, Saffron strands, Almonds and Pistachios to garnish
Method:
- Heat ghee; add Fortune Suji / Rawa and roast on low flame until fragrant and lightly golden.
- Warm the milk separately and add slowly, stirring to avoid lumps.
- Add sugar, cardamom, and saffron. Mix well.
- Cook until the mixture thickens and leaves the sides of the pan.
- Garnish with almonds and pistachios. Serve warm.
